Red Velvet Protein Bites

Ingredients

1 cup diced cooked beets½ cup canned pumpkin2 tbsp ground chia seeds 1 tsp vinegar⅓ cup skim milk130g chocolate protein powder (I used whey, you can use your favourite)2 tbsp coconut sugar3 tbsp cocoa powder2 tbsp coconut flour2 tsp vanilla2 tbsp coconut oil, melted
Add the beets, chia seeds and pumpkin to a food processor and blend until beets have pureed.
Add the vinegar and milk and process until blended.
Add protein powder, sugar, cocoa, coconut flour, vanilla and process until smooth
Add melted coconut oil and blend until well incorporated.
Chill for 2 hours
Remove from fridge and scoop into 1 tbsp balls.
Roll in cocoa and store in the fridge or freeze (these are very soft - I recommend putting each one in a portion cup or mini cupcake wrapper for storage)
