Salad:1/2 cup Bob's Red Mill Whole Grain Bulgar Cracked Wheat 1 cup water1 medium Cucumber, peeled, seeded and chopped1 large Tomato, chopped3 stalks Green Onion, slicedDressing:1/4 cup Fresh Lemon Juice 1/4 cup Olive Oil 1/2 tsp Oregano leaves, dried1 clove Garlic, minced 1/2 tsp Granulated Sugar 1/2 tsp Pepper, black 1/8 tsp Salt
In a pot bring Bulgar wheat and water to a boil. Once boiling, reduce simmer, cover and cook for 12 min. Drain excess water after cooking. Set aside to coool.
While Bulgar wheat s cooking mix all ingredients for dressing together.
Once Bulgar is cool, add tomatoes, cucumbers and green onions. Toss with dressing and serve or fill further in cooler until ready to serve.
Serving Size: Makes 6 - 1/2 cup serving
