Ingredients
2 whole boneless, skinless chicken breasts1/4 tsp pepper1/2 tsp salt2 Tbsp. oil1 Cup finely chopped onion1/2 Cup finely chopped celery1/2 cup finely chopped green pepper2 cloves minced garlic1/2 cup water1/2 tsp. salt1 bay leaf14 1/2 oz. diced tomatoes1 1/2 tsp paprikadash cayenne pepper
Directions
Cut chicken into cubes. Toss with salt & pepper. Heat oil in Lg. skillet. Add chicken & cook until slightly golden. Remove chicken & juices & set aside.

Heat oil in same skillet. Add onion, celery, green pepper, garli & saute until tender. Stir in tomaoes, 1/2 Cup water, paprika, salt, cyenne pepper & bay leaf. Bring to boil, cover & simmer over low heat for 10 min. Add chicken & juices. blend 1 tsp. cornstarch with 1 Tbsp water. Stir into chicken mix. uncover & simmer over low heat 10 - 15 min. Serve over cooked rice.
