Easy Whole Wheat Bread, Lightened Up

Ingredients
Directions
Mix 1/2 C of hot water with 1 cup of nonfat milk. Confirm that it is lukewarm (about 110 degrees). Dissolve 1 packet of yeast in the milk/water mixture.
Add 1 tsp salt, 1 tbs of Olive oil, 1 tbs of Honey and 1-1/2 cups of whole wheat flour, and mix well.
Cover tightly and set in a warm dry place to rise for 30 minutes.
After 30 minutes, add 1-1/2 cups of whole wheat flour and stir. Add more flour until dough no longer sticks to the bowl.
Turn out on floured surface and knead for 6 to 8 minutes. Add more flour as needed. Dough shouldn't be sticky.
Shape into 2 logs or 1 large log shaped roll.
Options:
Allow to rise for 30 to 60 minutes and then bake for 30 minutes in 425 degree oven.
or
Place in a cold oven for 15 minutes. Turn on oven to 425 and bake for 25 to 30 minutes.
Now, when bread is a nice color, check for doneness by thumping the bottom of the loaf. It should sound hollow.
Comments From the submitter: I made this bread following option 2 last night. It's a little dense, and I think next time, I will let it rise the second time around for 60 minutes and then bake in a preheated 350 degree oven for 30 minutes.
