mushroom and sesame stir-fry

1 bunch scallions(trimmed and sliced)2 tbsp sesame oil8 oz carrots, peeled and diced1 red bell pepper(diced)1 green pepper(diced)1 yellow pepper(diced)1/2 lb of mushrooms(sliced to preference)1/2 lb zucchini (trimmed and cut into sticks)1 tbsp light soy sauce1 tbsp lemon juicesalt and pepper to taste6 oz bean sprouts2 tbsp sesame seeds
fry scallions quickly in the heated oil for a minute or so. add carrots and bell peppers and continue to fry for 2-3 minutes.
add mushrooms, zucchini and continue to cook for another 2-3 minutes.
combine soy sauce, lemon juice, salt and pepper followed by the bean sprouts.
cook for a further 2-3 minutesand serve with sesame seeds.
makes four servings
