Decadant Chocolate Bread Pudding

Ingredients
1 cup heavy whipping cream1 cup whole milk1/2 cup sugar - reserve 2 tablespoons1 1/4 cup semi sweet chocolate chips1 large egg1 teaspoon vanilla4 oz. french bread, cut into 1/2" cubes.
Directions
Preheat oven to 350 degrees F

Bring cream & milk to a simmer, take off heat. Add sugar and whisk until dissolved. Add chocolate chips, whisk until well blended. Let cool while:

Whisk egg until well blended and smooth. Whisk in the vanilla.

While pouring chocolate mixture in a fine stream, continuously whisk the egg-vanilla mixture. Add bread and stir to coat well. Pour into 9 x 9" baking dish and bake until the center is just set - about 50 minutes. Serve warm.

    Since this is baked in a 9 by 9 inch pan, I assume you would cut this into 9 pieces (2 cuts - 3 pieces - each direction) which brings the calorie count down to 306 calories per serving and 18 grams of fat -- still high, but perhaps permissible for a celebration. - 3/19/08
