Ingredients
Directions
1/2 cup Cooked Chicken Breast [4 oz. cubed]2 Egg Whites5 Tbsp. of Salsa
This makes one serving, but just double the recipe for another serving, etc.
Start with a warm non-stick pan and put some water into it until it bubbles. Drop in the already cooked chicken first and just warm it up. Spread the chicken to the sides of the pan and break the two egg whites into the center and let them start turning white. Then scramble the egg whites and chicken together till the egg whites are firm. Pour salsa over the whole thing and you're done! Literally takes me 5 minutes to cook.
I use left over chicken breast from the night before. Hope you like it. It's a great high protein breakfast if you're on a low-carb diet.
