Summer Garden Slaw

Ingredients
1 1/2 cups shredded cabbage1 1/2 cups shredded dark leafy greens1 cup shredded beets1/4 cup sliced green onions2 Tbsp chopped fresh parsley1/4 cup vinegar of your choice, or to tastesalt and pepper to taste
Directions
Combine all ingredients except vinegar and salt and pepper in a large bowl. Add vinegar, salt and pepper just before serving and stir well to make sure the vinegar gets all the way through the veggies.
