Kudoo Gosht (summer squash with beef)

1 lb beef, cubed2 c summer squash, diced1 large onion, thinly sliced2 med tomato, chopped3 cloves garlic, mashed2.5 tsp salt1 tsp red cayenne pepper1 tsp turmeric2 tsp. ground coriander3 c water 3 tbsp cooking oil
Heat oil in a large pot or pressure cooker. Saute onions and garlic until browned. Add meat and lightly brown. Add tomatoes and all seasoning. Mix well with a little water. Cook about 5 minutes until all ingredients are soft. Add 2 1/2 c. water if using a pressure cooker. Safely attach the cover and cook on med high heat about 15 minutes. If using conventional pot, add only 1 1/2 c. water and cook on med heat about 35 minutes or until meat is completely tender. Add the squash when meat is cooked completely and simmer about 10 minutes or until squash is tender. To thicken the gravy, continue to simmer or add 1 tsp corn starch or flour mixed in a little cool water.
Serve with chapatti or your favorite boiled rice. Makes about 8 servings.
