Italian slow cooker meatloaf

Ingredients
14.5 ounce can Italian Stewed Tomatoes chopped 2 serving Rudi's gluten-free multigrain bread 1/2 cup Onion (raw), chopped 1/2 cup Zucchini - Raw - Chopped 1/2 cup Pepper, Red, sweet, chopped 1/2 cup Egg substitute, liquid (Egg Beaters) 2 clove Garlic .1/4 tsp Pepper, black 24 oz Beef, 90% Lean Ground Beef from Sirloin 1 tbsp Parsley, dried 6 tbsp Ketchup, Heinz 2tbsp asian garlic/chili sauce (not sweet)1 Tbsp Lea & Perrins, Worcestershire Sauce 1 tbsp Dijon Mustard (Great Value) 1 tbsp Balsamic Vinegar
Directions
Mix all ingredients through parsley together
Coat a 3.5-4 quart slow cooker with non-stick spray
Cut three double thick 18 by 3 inch foil strips and lay crisscross in the cooker and spray with pan spray.
Put meat mixture in crock pot, and shape into an oval or round
Cover and Cook for 3.5 hours on low or 1.5 hours on high.
After cooking for this time keep cooker at high or turn to high.
Mix together last 5 ingredients an put over meat.
Cover and cook for 30-45 minutes more or till meat thermometer reads 165
Lift out with foil strips
Remove foil and top with fresh parsley and cheese if desired (not in calorie count) and let stand covered 10-15 minutes
