Cheesy Mexican Chicken Skillet

Ingredients
1.0 tbsp Butter, salted0.3 cup, chopped Onions, raw0.5 serving 1 Med. Green Bell Pepper3.0 clove Garlic1.5 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted2.0 cup, chopped or sliced Red Ripe Tomatoes3.0 cup Green Giant Riced Cauliflower6.0 tsp Old El Paso Taco Seasoning1.0 cup (8 fl oz) Chicken Broth1.5 cup, shredded Cheddar Cheese4.0 oz Mozzarella Cheese, part skim milk4.0 cup Spinach, fresh
Directions
1. In skillet melt butter, saute onion, pepper, and garlic until soft. 2. Add spinach and cook 3. Steam riced cauliflower in microwave according to package directions 4. Add taco seasoning, tomatoes, chicken broth, and cauliflower to skillet 5. Cook on medium for 10 minutes 6. Add cooked chicken 7. Simmer on low for 5 minutes 8. Sprinkle cheese on top, cover and simmer until cheese is melted.
