2 large Egg, fresh, whole, raw 2 tsp Cinnamon, ground 0.50 tsp Salt 1 tsp Vanilla Extract 2 tbsp Coconut Oil 1.50 cup Applesauce, unsweetened 1 medium (7" to 7-7/8" long) Banana, fresh 11 date Dates 1 cup, mashed Zucchini 0.50 cup, chopped Pecans 1 tsp Baking Powder 2 tsp Baking Soda 0.75 cup Oat Bran 0.75 cup Wheat bran, crude 0.75 cup Whole Wheat Flour 12 tsp Splenda 0.50 tsp maple extract 1 serving Almond milk, Blue Diamond Almond Breeze, vanilla unsweetened (1 cup) 1 tsp Lemon Juice 'Real Lemon' 100% juice 30 gram(s) Almonds Mariani Premium Sliced Almonds (1/4c) 0.75 cup Namaste Gluten Free Perfect Flour Blend 24 tsp Swerve Granulated (1 tsp) net carb (by IMENONELSE)
12 t Splenda is 1/4 cup and 24 t Swerve is 1/2 cup
A very ripe banana is best if you have one; smash it well.
I peel the zuchini and run it through the food processor.
Preheat oven to 350. Prepare muffin tins by adding paper liner and spraying with non-stick cooking spray.
Mix almond milk and lemon juice and let sit while you are preparing other things.
Peel and shred zuchini in food processor. Chop pecans in food processor. Crack and beat eggs lightly.
Melt coconut oil so it is liquid (about 20-25 seconds in micro)
Pit dates and chop them.
Combine all wet ingredients.
Whisk together all dry ingredients. (Do not put dates into this mixture. They go on at the end.)
Stir together all ingredients except dates. Spray muffin cups with non stick spray and fill them about 3/4 or slight more full. Added several pieces of chopped dates to top of each muffin.
Bake 16-20 minutes or until toothpick comes out clean.
Let cool.
