Ingredients
2 cup Corn Flour, masa 16 oz Lean Ground Sirloin 10% Fat 1 large Onion, chopped3 Avocado2 Serrano Peppers 24 tsp Canola Oil 12 oz Cotija Queso Seco Cacique cheese
Directions
add 2 cups of warm water to 2 cups of masa and mix thoroughly with a spatula. Roll into 24 balls of about 2 tbsp each. Oil two cupcake pans with the oil. place a ball between two pieces of plastic wrap and flatten into a tortilla. Carefully form into the cups using extra bits that overflow the top to patch any holes. Try to keep them all the same thickness, as thinner ones will take less time to cook and will burn before thicker ones. Bake at 400 F for about 15 minutes, until the bottoms are hard.

Prepare your fillings. I used taco meat and guacamole with cotija.
