Keto Mashed Cauliflower

2 head, large (6-7" dia) Cauliflower, raw 4 tbsp Kraft Avocado Oil Mayo 1 tsp Ranch Dip Mix Hidden Valley Ranch 1/2 tsp Morton Iodized Salt
Steam cauliflower. I use the instant pot on manual for 1 minute. Then quick release. You can also steam over a pot of salted water for 8-10 minutes.
Squeezing as much water as possible is important to a good texture. I squeeze through a fine strainer that I press down on the cauliflower with a silver mixing bowl. Mix the cauliflower around several times then transfer to a cheese cloth and squeeze down again with the mixing bowl.
Place into a blender with ghee, ranch mix and salt. About one minute.
Serving Size: Makes 6-1 cup servings
