8 ounces Chicken Breast (cooked), (canned is also fine)2 cup Bell peppers (Green, Red, Yellow, Orange) 1 cup, chopped Onions0.25 cup Kodiak cakes power cakes 4 cup Kirkland Signature Organic Chicken Stock 4 clove Garlic 454 grams Potato, raw (16 oz)4 cup kernels Yellow Sweet Corn, Frozen 4 tbsp Butter, salted 1 cup Nonfat Yogurt (Greek or Traditional) Optional: JalepenoOptional Toppings: 1 Slice Turkey Bacon2 TBS Mozzarella CheeseChopped Green Onions
Cook chicken breast
Saute peppers, garlic, and onion in butter until cooked
Stir in Kodiak Cakes to make a roux
add broth, bring to boil then add potatoes
after potatoes are partially cooked, add frozen corn, cooked chicken and yogurt. Simmer until fully cooked.
Serving Size: Makes 8 one cup servings
