Cheesy Spinach Squares

Ingredients
1 (10 oz) package spinach, rinsed and chopped1 c. all-purpose flour1 tsp. salt1 tsp. baking powder2 eggs1 c. fat free milk1/2 c. butter, melted1 onion, chopped1 (8 oz) package shredded mozzarella cheese
Directions
1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
2. Place spinach in a medium saucepan with enough water to cover. Bring to a boil. Lower heat to simmer and cook until spinach is limp, about 3 minutes. Remove from heat and set aside.
3. In a large bowl, mix flour, salt, and baking powder. Stir in eggs, milk and butter. Mix in spinach, onion and mozzarella.
4. Transfer the mixture to the prepared baking dish. Bake in the preheated oven 30-35 minutes, or until a toothpick inserted in the center comes out clean. Cool before serving.

    Instead of boiling spinach, I wilted spinach in a large fry pan, misted with olive oil. I also cooked the onion (1 cup) with the spinach. I added 1/4 tsp black pepper along with dry ingredients. Took to a potluck - everyone loved it - 4/9/10

    I thought these were pretty good...just a little bland. Next time I will add some garlic and cayenne to spice it up. I did subst. 1/2c wheat flour and 1/2c white and only used 3/4 stick of butter. Will make again with more spices. - 7/20/11

    These are so good! The taste almost like a crustless quiche. They look just like the picture. Be careful of the serving size because two servings (158.4 calories) can fit into the palm of your hand. You could lighten the recipe up like others have suggested. I would recommend this to EVERYONE! - 8/13/09

    Sorry: the calorie count is very off! 1 c flour=611, not 432 cal. A stick of butter is 814 cal not 792. The cheese=678 cal, not 312. And "0" cal listed for 10 oz of spinach?? Even with using just half the amount of butter and light cheese, I am still 257 cal over the recipe estimate. Check the math. - 5/3/11

    I used .5 cup all purpose and .5 cup whole wheat flour and they turned out really good. They definitely don't need all the butter. I will try probably 6 Tbsp. next time instead of a whole stick. I added a clove of garlic to mine too, and they taste yummy! - 8/11/11

    This looks good if salt & butter are reduced, in particular. I will try them. However, the title's a misnomer because these are not brownies by any stretch of the imagination. They are quiche squares. "Spinach brownies" are chocolate squares with brownies added for extra nutrition. - 9/9/10

    These are SO GOOD. I took them to work and people freaked. I substituted half of the flour with whole wheat flour, used unsalted butter, and held back a little on the added salt. You could definitely get by with less butter... 3/4 of the stick should still be plenty. Great recipe! - 2/5/10

    I used frozen spinach which I just microwaved and then tossed with minced shallot. I then swapped whole wheat flour for the all-purpose, almond milk for skim, and added some crushed red pepper flake for a kick. Delicious!!! It made 8 dinner size portions which were 227 calories each. - 10/13/13

    Using a thawed, squeezed dried box of frozen spinach makes this an easy recipe to make without a special trip to the grocery store. Also great with chopped artichoke hearts. Chokes add fiber, texture and better flavor. A dab of cheddar on the top also adds a bit of color. - 2/3/13

    I actually prefer this once it has cooled off a bit. I don't care for the taste of cooked spinach, but I found the taste of spinach less strong after it cooled off. Would taste great with side Greek salad. - 1/24/21
