Ingredients
1.0 cup Chickpeas (garbanzo beans)0.5 tsp Baking Soda1.0 tsp Garlic powder1.5 tsp Salt0.5 cup Lemon Juice4.0 tbsp Tahini
Directions
1. Rinse & drain chickpeas. 2. Quick Soak: Bring chickpeas & baking soda to a boil in 7 cups of water, turn off heat, cover, & wait 1 hour. (This nearly eliminates flatulence) 3. Uncover, bring back up to a boil, then reduce heat & simmer until beans are falling apart & mixture is mushy. 4. Add remaining ingredients & stir. 5. Blend in food processor (when cool) or with hand mixer. 6. Garnish with olive oil & paprika, if desired. Enjoy! **Note** It takes 5 minutes to bring beans to a boil for the quick soak, approximately 30 minutes to cook them, and 5 minutes to add the remaining ingredients & blend. You can skip the hour it takes to quick-soak by either soaking overnight or using approximately 2.5 to 3 cups of canned beans (the cooked bean mixture needs to equal nearly 3.75 cups before adding remaining ingredients). Serving Size: Makes 8 half-cup servings

    This is an exceptional "basic" hummus recipe. Less than 100 calories per generous serving. It hits the spot and fills me up. It's my husband's favorite hummus (which says a lot because he's a picky Arab). - 2/10/18
