Low Fat Higer Fiber Zucchini Bread

Ingredients
1 cup Motts Naturals Applesauce, unsweetened6 egg whites1/2 cup pumpkin2 cups splenda2 cups grated zucchini1 TBSP vanilla extract (or almond, honey, etc.)1 tsp baking soda1 TBSP cinnamon1 tsp nutmeg1 tsp salt3 cups flour - 1 cup whole wheat, 1 cup white, 1/2 cup light rye, 1/2 cup ground Fiber One Cereal
Directions
Mix in order. Bake in small greased & floured loaf pans @ 350 degrees for 30-35 minutes. Makes 4 small loaves cut into eight slices each. Then the recipe makes 36 servings. One serving=1 slice. Or 12 large muffins and 12 mini muffins. Two mini muffins = 1 serving or one large muffin = 1 serving.
