Homemade Cheesy Mashed Potatoes

Ingredients
12.0 serving Golden Idaho Potatoes- 1 medium potato- Green Giant2.0 cup, fluid (yields 2 cups whipped) Heavy Whipping Cream1.0 stick Butter, salted1.0 cup Great Value Fancy Shredded Low-Moisture Part-Skim Mozzarella Cheese
Directions
Preheat oven to 400 degrees. Wash and peel potatoes, then boil in large pot until fork tender. Drain, then return to pot. Add 1 cut stick of salted butter. Mix with handheld mixer on low, gradually adding in 2 cups of heavy whipping cream until mostly smooth. Add 1/2 cup of mozzarella cheese and stir until melted. Transfer to a baking pan or dish and top with remaining mozzarella cheese. Bake for 10 minutes, or until cheese is melted and slightly brown. Serve immediately.
