Super Easy Rhubarb Cake

Ingredients
4 cups rhubarb (diced to 1" sections)1 package sugar free strawberry Jello1 package yellow cake mix1/2 cup granulated sugar1 cup water
Directions
Layer diced rhubarb in the bottom of 9"x13". Sprinkle packet of Jello evenly over the top of the rhubarb followed by the sugar, and the yellow cake mix. Sprinkle each layer as evenly as possible over the rhubarb. Last, pour the water over the top moistening all the powder ingredients as much as possible. Cover with foil and bake at 350 degrees for 30 minutes. Serve warm or cold. Excellent with ice cream.

    I made this today following the directions. It seemed undone to me, so I took the foil off and baked it 20 minutes longer at 400 degree F. It did taste good, but I'll probably go back to making my crisp. - 4/28/12
