Deb's Mexican Red Rice

Ingredients
Directions
1 tbsp oil1 cup whtie rice4 garlic cloves2 cups of chicken broth/stock1/4 medium onion1/4 cup chicken boullion (2 cubes)1 tbsp ground cumin (or to taste)3 oz tomato paste
Heat oil over medium high heat in a 10" skillet.
Pour dry rice into pan. Toast until slightly light brown.
Add whole garlic cloves and toast until rice is about light-medium brown.
While rice is toasting, place stock, boullion, onion, cumin, and paste into blender.
Blend until made into a watery sauce.
Strain into pan with rice once rice is toasted.
Cover and reduce heat to very low (just enough to keep the mixture simmering under the cover).
Cook covered for 20 minutes. DO NOT STIR UNTIL FINISHED!
Remove from heat and serve.
