Sausage and Apple stuffed Acorn Squash

Ingredients
2 squash (4 inch dia) Squash, winter, acorn, raw 2 serving Butterball Italian Style Turkey Sausage 1 link (by STRAIGHTS) 4 tbsp Onion (raw), chopped .5 cup, pieces or slices Mushrooms, fresh .5 cup, diced Celery, raw 1 serving Granny smith apple - 1 med. apple 0.25 cup Bread, Progresso Bread Crumbs, Garlic and Italian Herb 3 tbsp Egg substitute, liquid (Egg Beaters) 1 tsp Salt 1 tsp Pepper, black 1 tsp Sage, ground 1 tbsp Parsely, raw 1 Tablespoon (by HEALTHYLIVN4ME) 1 tbsp Butter, salted 1 tbsp Coconut oil
Directions
Preheat oven to 400.

Cut squash in half and seed. cut a small slice across the bottom so the squash will sit level on the baking sheet. Brush the inside with butter and salt and pepper to taste. Cook for 40 min.

Saute diced onions and celery in coconut oil until translucent, add died mushrooms, diced apples and turkey sausage. When using links remove meat from casing and crumble). Cook until sausage is done. Remove from heat and add bread crumbs and egg, mix well.

When squash is done, fill the cavity with sausage mixture, formed into a ball, return to oven for 20 minutes.
