Cate's Red, White, & Green Chicken Soup

4 thigh, bone and skin removed Chicken Thigh 1 large Onions, raw 1 large Onion, red3 cup Onions & Peppers, Sauteed 4 cup, chopped Carrots, raw 8 cup Chicken stock, home-prepared 4 cup White Rice, long grain, cooked 4 cup, strips Green Peppers (bell peppers)Salt to tastePepper to tasteOregano to taste
Cook 4 chicken thighs in crock pot, remove when done and shred meat off the bone.
Add a whole sliced white onion, whole sliced red onion, garlic, bell peppers, and bag of sliced carrots to chicken stock.
Return diced or shredded meat back to the pot. Cook in crock pot for 45 minutes .
Serve over a serving of white rice
