Ingredients
2 cup Cauliflower, raw 2 cup Parsley .5 serving english cucumber - 1 whole (by TINAT51796) 2 serving Grape Tomatoes (3oz/12 tomatoes) .25 cup Lemon Juice .25 cup Olive Oil .5 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) .5 cup Fresh Mint (by JILLSMYTH) 3/4 tsp lemon zest1 tsp Cumin1/4 tsp salt1/4 tsp pepper
Directions
Rice cauliflower with a box grater.
Chop parsley, mint and onion.
Cut tomatoes in 1/2 lengthwise
Toss all ingredients together in large bowl and mix.
Serve
