Garlic Parmesan Chicken & Zucchini

Ingredients
3 medium zucchini, sliced12 ounces chicken breast or tenderloin, chopped1 tablespoon garlic, finely chopped1 tablespoon onion, chopped2 cups sliced mushrooms1/3 cup grated parmesan cheese
Directions
Spray a skillet or frying pan with cooking spray and turn to medium/high heat. Add onions and garlic, saute until they begin to turn golden brown. Add the mushrooms and zucchini. Saute until mushrooms and zucchini start to become tender. Add chicken and continue to saute on high heat until chicken is completely cooked. Add the parmesan cheese, stirring frequently and coating all the pieces. Remove from heat once cheese has coated all pieces and melted to your liking.

Makes 4 1-cup servings (although for a meal I generally have 2 cups).

    This was so good!! The simplest things have the best flavor! I did leave out the mushrooms because we don't care for them, and I made my zucchini into zoodles. Doubling it barely made enough for my family of 5. - 2/7/16
