Goat Cheese Stuffed Chicken Breast

Ingredients: Goat Cheese, Soft, 4 oz ( Herb Encrusted)Pepper, black, 1 tbsp Dill weed, fresh, 5 sprigs Thyme, fresh, 2 tsp Rosemary, 1 tbspChicken Breast, no skin, 16 ounces
Pound out Chicken Breast Flat and thin and trim edges. Cut into 4oz servings. Pepper both sidesof Chicken. (May lightly salt if desired, Goat Cheese contains salt). Cut goat cheese into equal 1 oz portions spread into middle of Chicken along with remaining herbs portioned. Fold chicken in half and tye closed. Grill until chicken is done.
Best served on bed of wild rice with salad and vegetables

Best supper I have had in years!
I accidentally bought chicken breast "tenders", so we werent able to wrap them - we ended up cooking the cutlets and then spreading the goat cheese between 2 thin cutlets and quickly warming them again. I will definitely make this again - awesome! - 7/20/09

This was fantastic! I also didn't pound the chicken thin enough, but covered my pan with tinfoil to help the chicken cook faster (utilized steam). Even my hubby who is not a huge fan of goat cheese liked it. Made it with orange-flavored cous cous (to make add 1 Tbsp to cous cous prior to steaming). - 3/14/09

this wast tasty but I had some mishaps: used herb brie & some feta (couldn't find the goat cheese) and cooked in a grill pan. I did not securely roll them and they came apart in the pan. I also didn't flatten them enough, they were thick and took a long time to cook. I will try again soon! - 11/6/08
