Cabbage Soup

Ingredients
1 T Olive oil1 C onions, chopped3 cloves garlic, minced or chopped1 tsp. saltdash of black pepper2 cans diced tomatoes, low- sodium1 package of low-sodium chicken bouillon3 C water2 small red potatoes, peeled and diced1 small head of cabbage, chopped
Directions
In a stock pot, saute onions and garlic in olive oil over medium heat, cook for 5 to 7 minutes until onions are clear. Add tomatoes, salt and pepper. Cook for about 20 minutes until tomatoes are blended with the onions and garlic. Add remaining ingredients, bring to a boil and simmer for at least one hour on stove. Even better the next day.
