Incredible Meatballs!

Ingredients
1 to 1.5 lbs ground turkey breast 2-3 cups fresh spinach, de-stemmed1/2 tbsp olive oil1 egg1 or 2 cloves minced garlic3/4 cup fresh parm/romano blend cheeseabout 2/3 cup bread crumbs, seasoned or unseasonedwhatever seasonings you wish
Directions
In a saute pan, heat oil over medium heat. When oil is heated, add in spinach and wilt slightly. Place spinach aside to cool. Preheat oven to 350 degrees.

Add meat, bread crumbs, egg, seasonings, garlic, and cheese to a large bowl. When spinach has slightly cooled, roughly chop it and add to bowl with other ingredients; mix thoroughly.

Form golf-ball size meatballs and place on cooking-sprayed baking sheet, or in a cooking-sprayed glass dish and bake for 20-25 minutes.

Makes about 10 meatballs and two burgers, or about 20 meatballs. Serve immediately with a pasta, sauce, or veggies of your choice -- a really versatile recipe!

    These were great. I skipped the cheese and added less bread crumbs and mixed onions into the meat mixture. I also used 1/2 lb of ground turkey and 1/2 lb of italian sausage for some heat. I seasoned them with italian seasoning, and oregano and served with spaghetti! Thanks!! - 10/23/08

    I'm italian and normally make meatballs with veal, pork and beef. This was an awesome recipe that tasted almost the same as the "regular" meatballs that I make, but with a lot less fat and calories. Yummy!!! - 9/8/08
