Pineapple Jalapeno Shrimp

1 lb raw shrimp, shelled1 can pineapple juice in sauce, no sugar added (separate pineapples from juice - both will be used)1 onion, sliced2 jalapeno peppers, sliced4 tbsp low sodium tamari (soy sauce)2 tbsp corn starch3 cups brown rice
Cook brown rice according to package directions.
Heat non-stick skillet. Use sesame oil if necessary. Cook shrimp until just pink. Add onion, jalapeno, and pineapple (reserve the pineapple juice). Cook until onions are translucent and all are heated through.
Mix pineapple juice, soy sauce and corn starch. Add to shrimp mix and cook until sauce thickens.
Serve shrimp mix over brown rice.
