Tracy's Carrot-Apple Muffins

Ingredients
1 c. white flour1 c. whole wheat flour2 c. shredded carrots1 1/4 c. sugar or splenda1 apple, shredded3/4 c. raisins 3/4 c. shredded coconut1 Tbsp. cinnamon2 tsp. baking soda1 1/2 tsp. vanilla1/2 tsp. salt3 large eggs1 c. canola oil
Directions
Heat oven to 375. Grease muffin tins. Mis all ingredients except eggs and oil. (Mix eggs and oil seperately). Then, add to flour mixture. Bake approximately 25 minutes. Serve warm. This makes approximately 30-40 muffins.
