Crock Pot Mustard Pork

Ingredients
2 pork chops, excluding refuse (yield 2 cups) fresh, loin, blade (chops or roasts), bone-in, very lean and little fat, raw 1 cup, chopped yellow Onion, raw 6 tsp Guldens Spicy Brown Mustard 3 tbsp Catsup 6 tbsp Sweet Rice Vinegar - (Nakano) 2 tsp McCormick Salt Free All purpose seasoning (by CALIDREAMER76) 0.25 tsp Ground Cayanne Pepper (by SIRCHRISRR) 2 Garlic clove 1/2 to 1 cup water
Directions
Turn the crock pot on high to start it warming up. Trim the pork and slice into strips or bite-sized pieces, no smaller than 2" x 1" . Place in crock pot. Add remaining ingredients. Judge the amount of water to add by how "juicy" you want the end product. Lean pork will double the liquid you start with as it cooks. If you are going to slow cook this recipe, leave the crock pot on high for at least half an hour, to get the pork cooking. Cook on high 2-3 hours until pork is fall apart tender. Or on low for 6 hours.

Serve over steamed rice or elbow pasta.

Great for the lunchbox.
