Spinach and Feta Quiche

1 cup, chopped Peppers, sweet, red, fresh 1 cup, chopped Onions, raw .75 package (10 oz) Spinach, fresh 2 large Egg, fresh, whole, raw .5 cup Egg substitute, liquid (Egg Beaters) .5 cup Flour, white .5 tsp Baking Powder 1.33 cup Milk, nonfat (skim milk) 4 oz Feta Cheese 8 piece (1/8 of 9" crust) Pie crust, frozen, ready-to-bake
Preheat oven to 400 degrees.
Chop onion, pepper and garlic and saute in 1 Tbs olive oil. Add spinach until just wilted.
In a bowl, whisk eggs, egg beaters, dry ingredients and milk. Add veggies. Pour into prepared pie crust and top with feta cheese. Bake 30-35 minutes (I suggest wrapping crust in foil and removing halfway through).
