Tabouleh Salad

Ingredients
couscous11 tbsp olive oil8 tbsp parsley3 small/med tomatoes1/2 red onion1/2 yellow onionsalt & pepper to taste3/4 cup lemon juice
Directions
add 2 1/2 cups dry couscous to 1 cup boiling water. add olive oil and lemon juice and mix together. cover and let sit for 5 min. add tomato, parsley, onions and salt and pepper to taste. cover & let sit in fridge for 1 hour before serving.
*add 2 tbsp chopped mint leaves if you like.
