Chorizo and veg breakfast frittata

Ingredients
3 serving Large eggs 60 grams Chorizo ring 100 gram(s) bell pepper, red, sweet, raw 1 cup, chopped Onions, raw 1 cup Spinach, fresh 50 grams Sainsbury’s Light cheddar 2 tbsp Extra Virgin Olive Oil 10 serving Cherry Tomatoes, Fresh, 1 Tomato
Directions
Fry the vegetables in a oven proof pan in this order leaving 2-5 mins between adding the ingredients ; onions, peppers, tomatoes spinach and then add the chorizo (chopped into cubes). Beat 3 eggs and the cheese together- adding pepper or salt to taste Por the egg mixture in the pan and place it on the oven for 15-18 mins. Gas mark 6 (200•C)
