Carrot Salad with Oriental Peanut Butter Dressing

Ingredients
12 baby carrots, shredded1 large red bell pepper, thinly sliced1/2 cup raisins1/4 cup smooth peanut butter1 Tablespoon lemon juice1 1/2 Tablespoons soy sauce1 tsp. honeypinch red pepper flakes
Directions
1. Mix carrots, bell pepper, and raisins in a large bowl.
2. In a small bowl, whisk together peanut butter, lemon juice, soy sauce, honey and pepper flakes.
3. Add dressing to carrot mixture and combine thoroughly. Refrigerate at least 30 minutes before serving.
