.5 cup Olive Oil1 cup Chopped Onions3 tsp Chopped Garlic2 cans Stewed Tomatoes .25 tsp Saffron5 cups water2 cups chopped Broccoli1 cup sliced Zucchinioptional: cooked meat; add with veggiesServing size: about .5 cup
Heat up the olive oil in a large wok over high heat and fry the onions and garlic until aromatic. Add the dry rice and stir. Turn down heat to medium and add Stewed Tomatoes, water, stir in seasonings, and cover for about 10 minutes. Stir and turn down heat to low. After another 5-10 minutes, when the rice still has a little bit of water, stir and add your raw veggies on the top, turn off the heat and cover. Serve when the veggies are tender.
