Orange Almond Chicken

Ingredients
1/4 cup sliced almonds1 TBL olive oil4 boneless, skinless chicken breast halves1/2 cup chopped shallots3 oz. sliced mushrooms1/3 cup orange marmalade3 TBL soy sauce1/4 tsp pepperOrange Slices(optional)
Directions
Toast almonds in a nonstick skillet, over medium heat, shaking pan for 5 minutes. Remove from pan. Warm oil in same pan, medium heat, Add chicken and cook 5 minutes on each side, or until no longer pink. Remove from pan. Cook shallots until soft, add mushrooms and cook for 5 minutes. Stir in marmalade, soy sauce, and pepper. Add chicken, cover, and simmer on low for 10 minutes. Cover with almonds and orange slices. Enjoy!!!

    This was OK. The orange marmalade made the sauce taste too much like candy, and the sauce wasn't thick enough for me. The chicken needed extra flavoring, so maybe add a tblsp of minced garlic to the saute'. Probably won't make this again. - 10/13/08
