Chicken Balls, Restaurant Style

1.33 cup (8 fl oz) Water, tap 2 tsp Baking Powder 2 tsp Baking Soda 2 tsp Granulated Sugar 1 cup Cornstarch 1 cup Flour, white 600 grams Chicken Breast (cooked), no skin, roasted
Cut chicken breast into bite-sized pieces
Combine flour, cornstarch, baking soda, baking powder and sugar in a large bowl and whisk.
Heat a pot or deep fryer of oil to 375 degrees F.
Add 1 1/3 cups cold water and mix until smooth. Batter will be fairly thick.
Dip chicken pieces, a few at a time in the batter and mix to fully coat, then place into oil. Allow to cook until golden brown and fully cooked (three to five minutes).
Remove to paper towel to drain and serve with sauce of your preference.
