Summer Tomato Salsa

Ingredients
Red Ripe Tomatoes, .5 cup, chopped Avocados (Haas), .25 fruit without skin and seeds Garlic, 1 clove balsamic vinegar, .5 tablespoon *Extra Virgin Olive Oil, .125 tbsp Yellow Sweet Corn, Frozen, .25 cup kernels Red Onions, raw, .125 cup, chopped Cilantro 4 tbsp
Directions
Makes 2 servings.

Combine all ingredients in small bowl, mix and chill for 30 minutes. Serve on baked or grilled salmon. Squeeze lime wedge on top.

    Tried this salsa originally w/ the Salmon and Summer Tomato Salsa meal. I loved the Salsa so much I started making it by itself! I esp. love it on a salad w/ shredded Mozzarella cheese. So good! - 9/6/10
