American Goulash with Ground Chicken Breast

Ingredients
Directions
1 lb ground chicken breast1 cup, chopped Onions, raw 1 clove garlic, chopped3 cup, pieces or slices Mushrooms, fresh 2 cup Spinach, fresh 1 tbsp Olive Oil 2 cup, chopped Green Peppers (bell peppers) 6 oz Elbow Macaroni, cooked separately according to directions2 cup (8 fl oz) Chicken Broth 3 cup Canned Tomatoes Fresh Basil to taste
Cook chicken breast in olive oil. Add onions, mushrooms, garlic and Peppers. Saute until veggies are tender. Season with salt and pepper.
Add tomatoes (with juice) and broth. Season with fresh basil leaves (alternatively dry Basil or Italian Herbs).
Simmer for 15-20 minutes until flavors are blended and thickened. Stir in spinach and macaroni, cook for a few minutes for spinach to wilt. Divide into 4 satisfying servings, makes steaming bowls of pasta satisfaction. Add some shaved Parmesan if desired (not in nutrition info)
