Four Yolk Omelette (Keto-friendly recipe)

Ingredients
0.5 cup Colby and Monterey Jack Cheese shredded 1 large Egg, fresh, whole, raw 3 large Egg Yolk 3 Slices Farmland Bacon, Smoked, Classic Cut .25 cup, pieces or slices Mushrooms, fresh 1 tbsp chopped Onions, raw 1 tbsp Butter, salted 3 tsp Kosher Salt (by 65PLUS1)
Directions
- Starting with 4 whole eggs, add 1 whole egg to a container suitable for whisking eggs.
- Of the 3 remaining eggs separate the yolks from the whites, save or discard the whites, then add the yolks to the whole egg.
- Mix the egg, yolks, and 1 tsp of the salt together and mix well.
- Melt the 1 tbsp butter in a hot pan.
- Pour the egg mixture into melted butter and allow bottom-side to cook slightly, then evenly sprinkle on the rest of the ingredients.
- Cover and allow to cook until the eggs are cooked through.
- Fold in half and serve.
- Apply as much of the remaining salt (and, if you like, add pepper) as you wish to taste.
