Strawberry Poke Cake

Ingredients
1 white or yellow cake mix (Pillsbury does a reduced sugar variety), Light Cool Whip, 1 Cup Fresh Strawberries (or other fruit as desired) and 1 package of strawberry Jello (or other flavor as desired sugar free should help lower calorie count)
Directions
Bake cake as directed. Allow to cool. Place cake back into pan if it has been removed. With the handle of a wooden spoon or with a fork poke holes randomly around the top of the cake.

Mix the jello according to the directions and pour over the cake. Allow to gel. Use the Cool Whip as the frosting and top with sliced strawberries.

Serves 12.

    This recipe is really good. Was a huge hit with the family. What I did to make it more lower in fat is I replaced the oil for applesauce and egg whites instead of whole egg in the cake mix. - 8/18/08

    Another variation is to put a layer of vanilla pudding between the cake and Cool Whip layer. That's how my grandmother always made this cake, and it is delicious. - 5/3/10

    To reduce calories even more, when making the cake just pour in one can of diet soda; mountain dew or 7-up, whatever you like as long as it is diet--DO NOT use oil or eggs, JUST DIET SODA!     Hey this sounds great but could you fix the recipe please? The calorie count only counted the strawberries, and you did not say how many strawberries and you also didn't say the size package of jello to use. This sounds delicious though! - 6/24/08
