1 pound green tomatoes1/4 cup whole wheat panko8 sprays olive oil cooking spray1 tsp Creole seasoning1 egg white(s)
1.Process the Panko with the Creole Seasoning until quite fine grained.
2. Spray a pan with Olive Oil Spray.
3. Slice up the green tomatoes. (Allow about one tomato per serving.)Paint the "up" side lightly with egg white.
4. Sprinkle with the Panko.. They are not "breaded" but will have crunch and texture.
5. Spray the tomatoes with Olive Oil Spray.
6. Bake at 400 degrees until the tomato is tender and the top is crisp.
