Baked oatmeal to go

Ingredients
2 serving 1 Egg- large, fresh 1 tbsp Vanilla Extract 2 cup Applesauce, unsweetened 1 large (8" to 8-7/8" long) Banana, fresh and mashed6 serving Stevia Extract In The Raw Sugar Substitute [1 packet] 5 cup Quaker Oats Old-Fashioned Rolled Oats .25 cup Flaxseed, ground or food processed1 tbsp Cinnamon, ground 3 tsp Baking Powder 1 tsp Morton Iodized Salt 2 3/4 cups Milk Reduced Fat Milk 2% Great Value ( 1 cup serving)
Directions
Preheat oven to 350. Mix eggs, vanilla, applesauce, banana mashed and Stevia (or 1/2 cup honey) together in a bowl. Add oats, flax, cinnamon, baking powder, salt and mix well. Pour in milk and combine. if using fresh or frozen fruit, drop it right into the batter. Use cupcake liners for 18. Nutrition is making 24 instead and no fruit. Pour evenly into the muffin tins. If using toppings add them on top now. Bake 30 minutes until toothpick in center comes out clean. Cool and enjoy or freeze in gallon size bags.
