8 large Egg, fresh, whole, raw 4 oz Feta Cheese 0.5 medium (2-1/2" dia) Onions, raw 2 clove Garlic 2 tbsp Extra Virgin Olive Oil 1 tsp Oregano, ground .5 tsp Kosher Salt (by SRATERMAN) 3 dash Pepper, black 8 cup kale, raw
saute onion and garlic in EVOO, add kale, saute til mostly done (can put lid on to help steam kale). Beat eggs, beat in feta and half and half, pour into pan. stir to distribute kale. cook on med-low, then when starting to set on bottom, stick in low broiler for ~3 minutes.
