Bun Chay (Tofu and Mock Duck Salad)

Ingredients
1 cup rice noodles, prepared1/2 cup cucumber, julienne strips1/2 cup bean sprouts (fresh, raw)1/4 cup julienned carrot strips1 Tbsp fresh cilantro, chopped1 Tbsp fresh basil leaf, chopped1 Tbsp fresh mint leaves, chopped1/2 cup chopped Romaine lettuce1/4 cup Caramelized sweet onions (optional)1/4 cup tofu, cut into bite-sized strips1/4 cup canned braised seitan tidbits or mock duck, rinsed1 large wedge lime (about 1 Tbsp)1/4 cup vegetable broth1 Tbsp fish saucered pepper flakes (optional)
Directions
Combine broth, fish sauce, juice of the lime, and red pepper flakes. Set aside.

Combine the rest of the ingredients in a large bowl. Add dressing to taste.

Yields 1 HUGE portion
