roasted vegetable tacos

Ingredients
1 beets (2" dia, sphere) Beets, boiled 1 carrot Carrots, cooked 1 medium (2-1/2" dia) Onions, raw 2 serving Sweet Potatoes, Baked (One potato) 1 tbsp Extra Virgin Olive Oil 1 serving Mission White corn tortillias, 2 (by JOANN562) 4 tbsp Sour Cream
Directions
preheat oven to 350. peel, cut, and slice all vegetables. roast for 30 min. fry tortillas, fill with roasted vegetables and sour cream add salsa if desired.
