Lebanese Lemon Garlic Sauce

Ingredients
1/3 cup diced garlic (I use jarred in water)1/4 cup lemon juice (fresh squeezed is best, bottled turns out ok, too)1/4 cup very light extra-virgin olive oil1 tsp. fine sea salt (regular salt turns out ok)1 cup crushed saltines (I used salted... watch for over salting, if you are sensitive to salt and adjust to taste)
Directions
Place garlic in small food processor and pulse until almost liquified, add lemon juice slowly and keep processing. Add olive oil and salt. Process until liquid. Add crushed saltines and process until texture similar to hummus (pasty). All ingredients are approximate and can be adjusted to suit your own tastes. If spead is too liquid, can add saltines or refrigerate (oil will thicken).
