Atkilt Wot (Ethiopian Potatoes & Cabbage)

Ingredients
4 large (3" to 4-1/4" dia.) Potato, raw 3 cup Cole Slaw, Fresh Express 1 cup, chopped Onions, raw .5 cup Olive Oil 1 tsp Cumin seed .5 tsp Turmeric, ground .5 tsp Pepper, black 1 tsp Salt
Directions
1. Heat oil over low heat. Add onions, and simmer 2-3 minutes. Add potatoes and stir until coated in oil. Add spices and stir until the spices are well mixed. Cover, stirring every minute or so.

2. When the potatoes are starting to soften (about 15-20 minutes), stir in the cabbage and carrots (or cole slaw mix). Cover, and continue to stir regularly until the potatoes are cooked and the cabbage and carrots have softened (another 10-15 minutes). Serve warm.
