Gomen (Ethiopian Greens)

Ingredients
1 serving Nature's Greens, Collard Greens, 3 Cups 2 tbsp Olive Oil .75 cup, chopped Onions, raw 1 cup, chopped Green Peppers (bell peppers) 8 clove Garlic .5 lemon yields Lemon Juice 1 tsp Salt .5 tsp Turmeric, ground .5 tsp Paprika .5 tsp Allspice 6 tsp Ginger Root
Directions
1. Put chopped collard greens in a pot with 2 cups water. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes.

2. Heat oil over medium heat. Add onions and cook until they begin to brown (10 minutes). Add in garlic and freshly minced ginger root. Toss or stir in spices.

3. Cook for 1-2 minutes, then add the collard greens, any remaining cooking water, lemon juice, and peppers. Simmer another 15-20 minutes, until peppers and greens are tender.

Serving Size: Makes 8 servings of about 1/2 cup each
